Can a gluten allergy from childhood go away and come back - #10416

My mom, 56 years old, had a gluten allergy as a young child. The problem stopped as a teen. She never had any problem with gluten since. However this whole week she has started having stomach pains, gas, and headaches shortly after eating gluten. For two examples she shared a sandwich with me at church 5 days ago and described these symptoms afterwards. Tonight she had pasta and is now having the same symptoms. There were other instances this past week where she ate gluten and got stomach pains, gas, and headaches shortly after. So is it possible her allergy from childhood could come back? What would testing for gluten intolerance entail? What would a doctor have to do to find out if it is gluten intolerance?
